Yau Gock (ªo¨¤)
Ingredients:
Slab sugar 30 g
Water 50-65 ml.
Oil 1/2 tbsp
Glutinous rice flour 80 g
Tang flour 2 tsp
Red bean puree 200 g
Sesame seeds 10 g
Method:
1. Chop the slab sugar finely. Dissolve slab sugar in 50-65 ml. hot water, add
1/2 tbsp oil.
2. Sieve glutinous rice flour and Tang flour into a mixing bowl.
3. Make a well in the center of the flour, add the boiled mixture to form a soft
dough.
4. Knead and shape the dough to a long roll and cut into 10 pieces.
5. Roll each piece into a round wrapping of 7.5 - 8 cm diameter.
6. Divide the red bean puree into 10 equal portions.
7. Add one portion of red bean puree to each round of wrapping and fold the round
into a semi-circle.
8. Pinch edges together into 8 mm wide ledge to form scroll design.
To form scroll design, start from left hand side, push up a bit of ledge at an
angle, press down fold; push up some more ledge, press down fold, repeat process
until scroll design extends all the way along arc.
9. Deep fry until golden brown. Make 10 servings.
