Stewed Noodles (Àí¥ìÄÑ)
Ingredients:
Chinese 'I-Fu' noodles 1 large cake
Lean pork 40 g
Mushroom 1 no.
Straw mushroom 25 g
Silver sprouts 40 g
Yellow chives 15 g
Chicken stock 300 ml.
Oil 2 tbsp
Seasoning:
Salt 1/4 tsp
Sugar 1/2 tsp
Cornflour 1/2 tsp
L. Soya sauce 1/2 tsp
Sauce:
Oyster sauce 1/2 tbsp
L. Soya sauce 1/4 tsp
D. Soya sauce 1 tsp
Salt 1/4 tsp
Pepper few shakes
Sugar 1/2 tsp
Sesame oil few drops
Cornflour 1 tsp
Chicken stock 300 ml.
Method:
1. Boil noodles in hot water. Rinse in cold water. Drain.
2. Soak and shred mushroom.
3. Slice straw mushrooms and cut yellow chives into 2.5 cm lengths.
4. Clean, dry, shred, and season lean pork.
5. Prepare sauce.
6. Stew noodles in 300 ml. chicken stock until almost dry. Dish up.
7. Stir fry silver sprouts, mushrooms, and lean pork separately. Pour in sauce.
Bring to boil and then add in yellow chives. Stir well. Dish on top of noodles.
