Short Crust Pastry ¾Ø´ß


(Basic Recipe °ò¥»°µªk)
Ingredients: 
Plain flour     200 g
Fat             100 g  (50 g margarine or butter)
                (50 g lard)
Salt            1/2 level tsp
Cold water      about 8 tsp


Method: 1. Sieve flour and salt together into a bowl. 2. Add the fat and cut into small pieces. 3. Rub the fat into the flour with fingertips, until mixture resembles fine bread-crumbs, lifting flour and fat to incorporate as much air as possible. 4. Add cold water all at once. 5. Cut and stir with a round-ended knife until large lumps are formed. 6. Mix together lightly with fingertips until a ball is formed. 7. Turn into a lightly-floured and knead lightly until cracks are removed. 8. Rest for a while before rolling out.
