Sponge Cakes (®üºø³J¿|)
Ingredients:
Eggs 2 nos.
Plain flour 35 g
Cornflour 15 g
Caster sugar 50 g
Vanilla essence few drops
Method:
1. Line a patty tin with paper cases.
2. Light the oven (180oC / 350oF )
3. Sieve flour and Cornflour together onto a piece of wax paper and then put on a
plate.
4. Break eggs into a mixing bowl and whisk. Add in sugar and whisk until thick and
creamy.
5. Lightly fold in the flour mixture ( 1/3 at a time)
6. Add in the vanilla essence. Mix lightly and quickly.
7. Spoon the cake mixture onto paper cases.
8. Bake in the oven for 20-25 mins.
9. When cool, decorate with glaze icing.

Glaze Icing
Ingredients:
Icing sugar 50 g
Warm water 1/2 tbsp
Flavoring and coloring
Method:
1. Sieve the icing sugar into a basin.
2. Add the warm water.
3. Stir until fully mixed and smooth.
4. Flavor and color.
5. Use at once.
