Gingerbread (มคนก)
Ingredients:
Plain flour 100 g
Bicarbonate of soda 1/2 tsp
Ground ginger 2 level tsp.
Egg 1 no.
Milk 3 tbsp.
Margarine 50 g
Sugar 50 g
Golden syrup 1 tbsp
Raisins 2 tbsp.
Method:
1. Sift the flour, baking powder, and ginger together into a mixing bowl.
2. Melt the fat, sugar, and golden syrup together in a small saucepan over a gentle
heat. Stir with a wooden spoon. Cool slightly.
3. Blend the fat and syrup mixture into the flour in the mixing bowl.
4. Add the beaten egg to the milk. Then add this to the flour mixture, blending well.
5. Add the fruit and stir well.
6. Pour into a greased baking tin or loaf tin. Bake in a moderate oven, 180oC (350oF)
or Reg. 4 for 20-25 mins.
7. Cool before cutting into slices, squares or fingers.
