Chinese Savoury Pancakes (¤¤¦¡Á¡»æ)
Ingredients:
Roast pork 40 g
Dried shrimp 15 g
Mushroom (small) 2 nos.
Chives 20 g
Oil 6 tbsp
Batter:
Plain flour 65 g
Pepper a few shakes
Sugar 1/4 tsp
Salt 1/2 tsp
Lard 1/2 tsp
Sesame oil 1/4 tsp
Water 150 ml
Method:
1. Wash and soak mushrooms and dried shrimps. Wash chives.
2. Sieve flour. Add in pepper, sugar, and salt.
3. Make a well in the center and stir in water gradually until the batter is
smooth. Add lard and sesame oil.
4. Chop dried shrimps, roast pork, mushrooms, and chives. Add to the batter
and mix well.
5. Heat frying pan, add a little oil and put in 1 tbsp. batter mixture and fry
until golden brown on both sides.
